Coconut   Chocolate     Cookies

 


 

Makes sixty 2 1/2-inch-diameter cookies, or thirty 3-inch-diameter cookies

INGREDIENTS:
1 box (18.25-ounce) Swiss chocolate cake mix, Duncan Hines®
1 1/2 cups semisweet chocolate morsels, Nestle®
1 1/4 cups sweetened flaked coconut, Baker's®
1 stick (4-ounce) butter, melted
2 eggs, beaten to blend

Prep time: 5 minutes
Baking time: 20 minutes total

PREPARATION:

  • Preheat oven to 350 degrees.
  • Stir cake mix, chocolate morsels, 1 cup of coconut, butter, and eggs in large bowl until dough forms.
  • Working in batches, drop heaping tablespoons of dough onto cookie sheet, spacing evenly apart.
  • Sprinkle cookies with remaining coconut.
  • Bake for 8 minutes, or until cookies puff and are just set around edges.
  • Cool cookies on baking sheet for 2 minutes.
  • Transfer cookies to cooling rack and cool completely.
